Sophorolipids are biosurfactants, or biological detergents, that are produced by the yeast Starmerella bombicola. They are made up of a hydroxylated fatty acid and the glucose disaccharide sophorose.Sophorolipids are soluble in water at pH 6.0 to 8.0. They almost dissolve in any ratio with water at pH 6, and dissolve completely at 200 g l-1. Sophorolipids are commercially relevant molecules that offer a green and renewable alternative for traditional surfactants. They can be synthesized by a selected number of non-pathogenic yeast species.
